Philadelphia: Fette Sau [Short]

Twilight.

I waited in a long line for BBQ. Close to an hour on a Saturday night in Fishtown, Philly. Fette Sau is from Brooklyn, but the line shows that it is pretty popular. I don’t understand why the wait is so long, but there are plenty of empty seats in the huge dining area. It isn’t very efficient considering food is not cooked to order. They ran out of brisket and brought more out – I don’t think it is smoked all day, but it just might be?

Ranking for the items (best to “worst”) – Pulled pork is really tender and juicy; short ribs fell off the bone and smoked well; Sausage is spiced and flavorful; Brisket, well, it is brisket? Everything is delicious, but I would not come back for the brisket. Next time, I’ll substitute the brisket for more pulled pork.
